I am preparing to generate my 1099 files for the IRS, but I want to verify the information before I do that. Is there a way for me to see what is going to be reported, without generating the IRS file?

You can run the Mailmerge file in Report Only mode for the form you wish to review. This will display the payee number, name, box information and amount.
